Ingredients

For the raspberry coulis (optional)

  • 1 cup raspberries
  • 3 tablespoons brown cane sugar
  • 1 tablespoon lime juice

For peach and yogurt puree (for polo)

  • 1 1/2 cup yogurt (whole milk)
  • 1 peach and 1/2 mango, peeled and diced (about 180 gr a vel peeled and cut)
  • 1/4 cup brown cane sugar
  • 2 tablespoons apple juice
  • 1/2 tablespoon lime juice

How to prepare the poles

  1. Put your molds or cups in the freezer.

  2. To make the coulis (optional) - if you don't want to prepare it, you can go to step # 3: In a saucepan, combine the raspberries with the sugar and heat until the raspberries have softened. Beat until very thin and we take out the seeds that may be. Mix together with the lime juice and let it cool.

  3. We put some coulis in the cups / molds (frozen), but only so that it sticks to the edges and forms a drawing on the walls. We reintroduce the molds in the freezer.

  4. To prepare the fruit puree: In a saucepan, we combine the apple juice with the sugar, and heat until the sugar has completely dissolved; We let it cool.

  5. In the glass of a blender, we will mix the yogurt, the peach, the mango, the lime juice and the apple juice. Beat until you get a fine texture; We let it cool.

  6. We pour the mixture into the molds or cups and put them in the freezer. If the modes have the option of introducing the stick we do it at this time. If they are glasses, we will wait about 45 minutes and insert the wooden sticks. Let it freeze for at least 6 hours.

  7. To serve, we put the glass under the jet of hot water so that it separates from the walls, then we turn the wooden stick to remove the pole from the mold.

Tricks: so that the polo is tricolor, what I have done has been freezing with half of the mixture and once frozen, I have put some strawberry and banana smoothie with yogurt.
You can also add whole fruit once you have dumped the mixture into the molds, such as raspberries, cherries (boneless), kiwi, banana ...
