Analytical strips to detect gluten in food

We have already referred several times to the difficulty that parents of celiac children often encounter in knowing whether a food is safe or not for their child. Finally, the first step has been taken to make possible a fast, simple and safe detection of these foods.

Researchers from the Department of Microbiology and Parasitology of the University of Seville, in collaboration with the Andalusian biotechnology company 'Biomedal' and the López Neyra Institute of the CSIC, have commercialized, for the moment only for use in the agri-food industry and for analysis laboratories, a analytical strips, similar to those used to detect pregnancy, which differentiate whether a food contains gluten or not. They are based on specifically detecting the part of gluten that is toxic to celiacs (only 10 percent of gluten is toxic to them). These strips take only 10 minutes to say the result,

According to the people in charge of this project, other similar methods already existed to detect the gluten of the foods but they were less specific than this one, since sometimes they gave cross reactions with other foods like the chocolate or the flours of some legumes, and it is also the First to detect the gluten in oats.

The goal is to end up marketing them for the use of the general public and thus improve the quality of life of these children and their families, avoiding poisoning and facilitating the search for reliable food.
